How to dry duck breasts at home , and how to keep them for longer.

Nothing could be easier than drying duck breast and the result is so impressive that you would be wrong to deprive yourself of this treat.
Just 10 minutes and it´s done. Place your duck breasts, fleshy side up, on a board and cut fat vertically without cutting away too much meat. Line the bottom of a baking dish with a good layer of absorbent paper. Pour a layer of salt on the paper, place your duck breasts and cover with another layer of salt. Leave them for 24 hours, making sure that the meat does not bathe in the water it releases.

Pepper and dry . Again, this is very quick. Brush to remove the salt crust or even rinse under the tap without excess and roll your breasts in the pepper. If you have thought to pierce the skin and fat to pass a string through, they can hang in a cool, airy place.

How long? It depends on the weather. If the air is dry, drying can be quite fast. On average, allow 10/15 days. To judge: feel with your thumb. The duck should retain some flexibility. Smell them. Drying in air, the smell will evolve
