Recipe of pancake in chaplain

What to do with pancakes? To change the traditional and no less delicious sugar crepe, surprise young and old with pretty pancakes well presented in the form of chaplains for their greatest pleasure. Guaranteed effect!

Folded and filled like a purse, the chaplain is an elegant way to present a pancake. Ventrue, it fuels curiosity and gluttony. Generous, it can, at the urge, be sweet or salty. You are spoiled for choice.   


How to make a chaplain? Make your pancakes according to the recipe you prefer. Then place in the center of each the filling of your choice. It can be just as hot or cold. There is no limit. Be creative!
Then, gather the edges towards the center trying to make nice folds and close.  

For the closure, several possibilities are available to you.
You can tie an edible link in perfect agreement with the filling:
a long sprig of chives,
a piece of leek green cut in length and blanched (which you will pass directly under cold water so that it keeps its beautiful green color),
a long zest of lemon or whitened or candied orange,
a ribbon of licorice split,
a vanilla pod used, cut in half.
Or with a non-edible bead like raffia, a piece of kitchen string, or a wooden pick (at each end put a small piece of fruit, cheese or tomato, etc.).   


Apple pepper recipe with salted butter caramel sauce (for 4 people)  

For the filling:
4 apples
1 tablespoon of honey
Butter (for cooking apples)  

For caramel:
150 g of sugar
4 tablespoons water
30 g salted butter
20 cl of liquid cream  

Making the recipe Peel and dice your apples. In a skillet, fry in a little butter. Add honey and leave to caramelize over medium heat.
For the caramel. Mix the water and the sugar, let caramelize over medium heat. When it has a brown color, remove from heat and gradually add the cream while stirring. Add the melted butter and mix. Let cool.
Place in the center of each pancake a few apples. Bring the edges and close.
In each plate place a chaplain and pour some caramel coulis.
Serve and enjoy!  

Some variations on the recipe: honey apple goat, Saint Jacques on leek bed, salmon with lemon cream, pear or chocolate banana, pineapple with spices .... Have fun!
