Kai Shun Classic 14 cm Santoku japanese knife in 32-layer damascus carbon steel.  

The Santoku is a multi-purpose knife whose name means "three advantages" because it is just as useful for cutting fish as it is for cutting meat or vegetables.
Multi-purpose, it is always useful in the kitchen, and its name and shape have spread even to European knife ranges.  

KAI Shun Classic knives are made in Japan in the tradition of Damascus steel samurai sword forging. Kai's fine blades, sharpened to 15°, provide unrivalled cutting finesse and limit the oxidation of food.
The VG MAX steel from the VG-10 steel with a very high carbon content (over 1%) from the Shun Classic range guarantees a very hard blade (61 HRC) and sharpening that lasts longer.
The 32-layer Damascus steel gives the blade a special aesthetic by highlighting the different layers according to their carbon content.
The full tang handle (the metal part of the blade runs down to the bottom of the handle) is made from Pakka, a wood and resin veneer that is pleasant to the touch, particularly strong and resistant to moisture.
A fine, precise and resistant blade. The Kai Santoku Shun Classic Damascus knife uses one of the finest, extremely hard, typically Japanese steels. This high level of hardness ensures that the knife will remain sharp over time, but it is still easy to sharpen. It also makes it possible to produce very fine blades and, above all, a 15° grind. This sharpness, which is twice as sharp as a conventional knife, means you can cut with great precision, preserving the flavour of your food and greatly reducing oxidation, as with apples and basil, for example.
A hard-wearing handle that feels great in the hand. This full tang knife has a handle that fits perfectly between the different materials. The stainless steel is finely polished and the Pakka wood composite gives a soft, pleasant grip. Pakka wood is perfectly resistant to moisture. The shape of the handle has been ergonomically designed. Its chestnut shape fits naturally in the palm of the hand and holds well. Hand wash. Store with care, protecting the blade. Do not use on glass, ceramic or stone surfaces. 10-year guarantee. Made in Japan.
