Japanese Santoku knife 18 cm blade Kai Shun Classic in 32-layer damask carbon steel.
The Santoku is a versatile knife whose name means "three advantages" because it is as useful for cutting fish as it is for meat or vegetables.
Multi-use, it is always useful in a kitchen and its name and shape have spread even to ranges of European knives.

its honeycomb blade prevents sticking to thin slices of food and allows them to be easily collected against the blade without them sticking to it. KAI Shun Classic knives are made in Japan in the tradition of forging samurai swords in Damascus steel. The thin Kai blades sharpened to 15° provide unrivaled cutting finesse and limit the oxidation of food. VG MAX steel made from VG-10 steel with a very high carbon content (more than 1%) from the Shun Classic range guarantees high hardness of the blade (61 HRC) and sharpening that lasts longer. The work of 32-layer Damascus steel offers a particular aesthetic to the blade by highlighting the different layers according to their carbon content. The full tang handle (the metal part of the blade goes down to the bottom of the handle) is made of Pakka, a veneer of wood and resin, pleasant to the touch, particularly strong and resistant to humidity. A thin, precise and resistant blade. The Kai Damask Shun Classic Santoku knife uses one of the best, extremely hard, typically Japanese steels. This great hardness is a guarantee that the sharpening will last over time and still allows it to be sharpened easily. It also makes it possible to produce very thin blades and especially a 15° grind. This sharpening finesse, twice as sharp as a classic knife, offers great precision in cutting, preserves the flavors of food and greatly limits oxidation, such as on apples, basil, etc. A resistant and pleasant handle in hand. This full tang knife has a handle that fits perfectly between the different materials. The stainless steel is finely polished and the Pakka composite wood offers a soft and pleasant grip. Pakka is perfectly resistant to humidity. The shape of the handle has studied ergonomics. Its chestnut shape fits naturally in the palm of the hand and fits well in the palm. Hand cleaning. Store carefully, protecting the blade.
