Recipe for ""Valencia"" paella

Genuine Valencia paella from Spain. Find out how to make delicious Valencia paella.

Recipe for Valencia paella for 4 people.

400 g. of chicken
300 g. of rabbit
240 g. of green beans
160 g. of garrofon beans (a variety of bean that grows near Valencia. They can be used fresh or dried if they are steeped for at least 12 hours)
65 g. of chopped tomatoes
100 ml. of olive oil
350 g. of rice
800 ml. of water
20 g. of salt
2 g. of paprika
1.5 g. of saffron

Cut the meat into pieces the size of an egg.
Pour the oil into the pan and once it is hot, sear the meat on all sides to get a nice golden colour.
Add the tomatoes and stir constantly until they are reduced.
Add the paprika and allow it to fry.
Now add the water, vegetables, saffron and salt.
Allow it to bubble for 20 minutes over a medium heat before adding the rice and spreading it throughout the pan.
Leave over a high heat for 10 minutes, then lower the heat and allow it to cook for 10 more minutes.
When the rice has absorbed all of the stock, allow it to stand for a few minutes before serving.
