Almond tart with red berries

As delicious as they are easy to make, almond tarts can be made using any seasonal fruit: strawberries, raspberries, cherries, apples, pears ... and you can even add chocolate drops.

If there are red berries, then it´s spring! And if you store them, it will be spring all year ... Raspberries, red currants and blackcurrants are sometimes acidic. But with added almonds, all fruit flavours are highlighted. If you use pears or apples add a little lemon juice.
600 g red fruit
20 cl cream
90 g sugar
1 large egg
125 g ground almonds
1 roll of pastry.
300 g flour.
150 g butter
100 ml water
1 pinch of salt

Recipe Preheat the oven to 200° C.
For the pastry:
. Let the butter soften until it is at room temperature.
Now mix all the ingredients, knead the dough and form a ball.
Put some flour on the work surface. Roll out the pastry with a rolling pin.
Put the dough in a pie dish and bake for 20 minutes.
When the pastry is ready, remove it from the oven and put to one side. Lower the oven temperature to 180° C.
Prepare the mixture by mixing the cream, sugar, egg and almonds with a mixer.
Cover the pastry with the almonds then add the red fruit and bake for 35 min at 180 ° c.
At the last moment sprinkle with icing sugar and serve with a scoop of sorbet.
