How does it work?: the Refractometer

Precisely measure the level of sugar in fruit to plan when to pick - plan the alcohol level of wine - find out the percentage of sugar in jams or cordials, even during cooking: long live the refractometer!

This refractometer/b> can be used every time you want to know sugar content. Place a drop of the product you want to measure and screw tight.
You have surely noticed that when you plunge a stick into water, the stick appears to break at the surface.
You will observe the same phenomenon if you plunge a pencil into a glass of water. If you look at the level of the surface, the pencil appears to be broken! This is refraction, a simple optical illusion. The water ""refracts"" the light´s rays by diverting them.
With sugar, the phenomenon is particularly interesting. The more sugar you add to water, the more the rays are diverted. This is what the refractometer measures.
Place a drop of sugary product onto the device and screw tight. You will see the sugar level appear through the peephole.

Brix degree
This is simply sugar expressed as a percentage. Adolf Ferdinand Brix was a 19th century German mathematician. He gave his name to this scale.
