Tanks called "wine guard" are designed to minimize contact with the air, whatever the level of filling. To do this, these tanks are equipped with floating lids that are placed on the surface of the liquid. When you draw wine or juice, the lid goes down. Obviously, so that the cover can circulate freely over the entire height of the tank it takes a little play. In addition, if there was no seal, a small portion of the liquid would remain in contact with the air. There are two types:  

Liquid paraffin seal
To avoid contact with the air, these models use liquid paraffin food that stays on the surface of the wine or juice and isolates it. The floating lid flushes paraffin around the edges and bacteria or oxygen can no longer oxidize or spoil the liquid.
Caution: Paraffin is not toxic. In its solid form, it is used to protect jams, for example, but does not draw the last drops. They will contain paraffin which serves as a seal.  

The pneumatic seal
With this system, the perimeter of the floating lid is equipped with a plastic air chamber. Once inflated, the whole is waterproof and the air can not pass. A pump with a manometer can inflate the chamber and ensure that the device is under pressure. The advantage of the pneumatic lid is that your tank can also be used as a fermentation tank. It adapts to all quantities of must. By equipping the floating lid with a bubbler, the gas can exit but the air can not enter.  

With or without bottom of tank?
For liquids that will decant and generate lees, the bottom of the tank is appreciable. These models are equipped with two faucets. The highest is used for drawing clear liquid. The bottom tank valve is used for cleaning or to collect all the stored liquid. For oils, the bottom of the tank also collects water in suspension.
