The terrine ... a second life for your meat dishes

In your refrigerator, you still have some cooked meats: beef, pork, chicken ... easily prepare a good family terrine to enjoy with or on a good slice of bread .  

An economical terrine, which allows you to use leftover cooked meats.
Chop 400 g of meat cooked with aromatic herbs. Mix this mince with 3 eggs, 15 cl of liquid cream, shallots, onions and garlic previously browned in a pan, salt and pepper. Put your terrine filled with this preparation in a preheated oven at 180 ° C for about 35 minutes. When you take it out of the oven, cover it and let it cool before placing it in your refrigerator. Wait a day before tasting it!   


Create a new dish with the leftover meats you cooked the previous days.
You served them the first time on the day they were prepared, then cold and you still have some left. To vary the pleasures and not to have the impression of always eating the same thing... make a simple and economical terrine that will delight everyone.
You will get the satisfaction of having made a delicious new dish yourself and also of getting rid of the leftovers without throwing them away.   


Ingredients for a terrine

400 g of leftover meat
3 eggs
15 cl of liquid cream
2 shallots
1 onion
1 clove of garlic
1 bunch of fresh herbs: parsley, thyme, tarragon, chives ... depending on what you have
Salt pepper
Butter   


Preparation of the terrine

Peel and slice the shallots, onion and garlic. Brown them in butter until they are lightly colored, set aside.
Wash and dry the aromatic herbs.
Go through a chopper equipped with an 8 mm grill for meat and herbs. Choose the grid according to the rendering you want: with large or small pieces?
Pour the mince obtained in a salad bowl. Add the eggs and the cream: mix well. Then insert the cooked shallots, onion and garlic, salt and pepper. Mix everything well so that all the ingredients are evenly distributed.
Fill your terrine, tamp it down a little and bake for about 35 minutes in an oven preheated to 180 ° C.
When the time is up, take out your terrine, cover it and let it cool to room temperature. Then place it in your refrigerator. Wait 24 hours before sharing it.
