The reverse back 13 cm boning knife is a common sight in professional settings. Its curved blade means that the knife can be held backwards to cut and bone. The reverse back is used with the blade held upwards for cutting.
Its stainless steel semi-flexible blade is made from Swedish Sandvik 12C27 steel with hardness in excess of 56-57 HRC. The quality of this steel offers exceptional quality cutting and superior blade consistency compared to knives that are wrought from standard steels, meaning that sharpening is necessary half as often.
The dual material handle is made from a polypropylene core that is waterproof and rigid, covered with elastomere that is more supple and comfortable to hold, with studied ergonomics that limit musculoskeletel disorders.
