Strawberry sorbet

Strawberry sorbet by René Espart, a Tompress customer

Ingredients:
1 kg of strawberries from your garden or the market
250 g of caster sugar
the juice of 1 orange
the juice of 1 lemon

Remove the strawberry heads and cut them in 2 if they are big.
Heat the strawberries in a saucepan until they lose some water.
Drain them.
Mix the strawberries, orange juice and lemon juice together in a blender.
Strain the result to remove as many small grains as possible.
Place in the refrigerator for at least 4 hours.
Place in the sorbet machine to get an excellent natural sorbet.
