Wall model maturing assistant.
When placed directly on the carcass, the device indicates the degree of maturity and the estimated time frame for the process. It also gives the room temperature and humidity level. These measures are important in particular to forecast bacterial proliferation if the temperature is high and humidity exceeds 85%.
Maturing is essential. It is during this phase that the muscle turns into meat and acquires its tenderness, juiciness and flavour. The optimal length of the process depends directly on the temperature and its fluctuations. This is what the device calculates permanently to give two essential pieces of information: the level of maturing as a percentage and the estimate time from for the process in days.
