SCANPAN® TechnIQ induction braising pan 30 cm non-stick Stratanium +, riveted stainless steel tail and counter-handle, high straight edges.  

This large TechnIQ braising pan from Scanpan has a shape and dimensions studied in collaboration with chefs to improve its use. Its large size allows you to prepare food for several meals or for many people. Its straight and tall edges cut offers a volume of more than 5 liters and allows mixing and stirring without overflowing.
This braising pan allows you to sauté, braise and simmer (lid sold separately).
With its accessory (optional) frying basket, make donuts, fried fish and other specialties based on meat, fish or breaded onion.  

Like the other utensils of the Scanpan brand, this TechnIQ braising pan is made from cast aluminum recycled cast and then pressed to 250 tonnes to obtain a robust tank with optimal heat conductivity over its entire surface. Its added bottom allows it to heat quickly and evenly even on induction.  

This braising pan then undergoes a new treatment which allows the exceptional performance of its Stratanium + coating by improving durability and sliding by 30%.
In addition to the titanium primer giving an extremely hard support for the non-stick, Scanpan adds ceramic to it which offers a textured surface. The whole secret is there.
This very hard textured surface exceptionally grips the non-stick coating which in fact becomes more resistant to wear (+ 30%).
Rather than a perfectly smooth surface which is fully in contact with food, this texture creates many small points of contact, limiting the surface in contact and thus improving non-sticking during cooking and cleaning (+ 30%).
The use of metal utensils is therefore perfectly possible in this braising pan.
The Stratanium + coating is guaranteed without PFOA.  

This large TechnIQ braising pan has a riveted stainless steel handle that stays cold and has a hanging hole as well as a riveted counter-handle allowing it to be worn full without difficulty. The length and the straight shape of the tail makes it easier to carry the pan by wedging the tail under the arm to lighten the load. The curved top offers good grip and great comfort in use. The stainless steel tail allows passage to the oven.
