The 20 cm fillet knife allows you to lift the fillets, breasts and chicken breasts, duck breast and fillet, and the fish fillets with ease.
Long resistance of the wire and comfort characterize this knife. Developed for professionals and accessible to all amateurs who want a good working tool.  

Its Swedish Sandvik 12C27 stainless steel blade has a higher hardness of 56-57 HRC.
The quality of this steel gives an exceptional quality cut, a hold of the blade wire superior to knives forged in standard steels and half the need for sharpening.
Gain in ease of use by sharpening less often, keeping a better edge longer, which avoids forcing and injuring yourself and allows you to work faster in good conditions.  

The bi-material handle is composed of a waterproof and rigid polypropylene core, covered with a more flexible elastomer which does not slip and is comfortable when taken in hand. Ergonomics is studied in order to limit MSD (Musculoskeletal Disorders).
