This robust and comfortable knife was developed for meat professionals, butchers, pork butchers, cutting workshops and slaughterhouses.
It is now accessible to all lovers of good knives who want a durable working tool and guarantee great comfort in use.  

The 15 cm reverse back boner is a very common knife in professional circles. Its curved blade allows you to work by holding the knife upside down for cutting and boning. The inverted back is also used with the blade upwards for cutting.  

Its semi-flexible blade slides into all joints. It is made of Swedish Sandvik 12C27 stainless steel and has a higher hardness of 56-57 HRC. The quality of this steel gives an exceptional quality cut, a hold of the blade wire superior to knives forged in standard steels and half the need for sharpening.
Gain in ease of use by sharpening less often, keeping a better cutting edge longer, which avoids forcing and injuring yourself.  

The bi-material handle is composed of a waterproof and rigid polypropylene core, covered with a more flexible elastomer, comfortable when grip, with ergonomics studied in order to limit MSDs (Musculoskeletal Disorders).  

Semi-flexible blade finish.
Available in rigid 15 cm and flexible in 13 cm.
