Black pudding terrine with apples
Ingredients for 6 people:
· 500 g black pudding
· 4 apples
· 50 g of butter
· Lemon juice
· Sugar
· Salt
· Pepper
Peel, seed and cut apples into thick slices and sprinkle with lemon juice so they do not darken.
Melt the butter in a pan, add the apples and cook for about 10 to 15 minutes over medium heat. Caramelize them by sprinkling them with sugar.
Season at the end of cooking. Book in a dish.
Peel the pudding, then with a fork crush it.
Stuff your terrine with parchment paper. Put a first layer of apples, cover them with a layer of blood sausage and so on. Finish with a layer of apples. Pack well.
Cover your terrine and refrigerate for at least 12 hours. Serve sliced with a salad.
