After a few weeks, the magic, (which is not magic anyway, since it's chemistry, but it's much less romantic), will have transformed the bottoms of bottles that you intended for the sink in a flavor that only needs to evolve and transform itself again and again. From brutal to aggressive, the vinegar will become round and lose its aggressiveness until becoming a liqueur and developing the sweetest perfumes.  

So how to proceed? First, get a vinegar . You will find in glass, it will be necessary in this case to keep it safe from light, sandstone or wood. Invest, for starters, in a good bottle of wine or cider, because we do not make a good vinegar with a common piquette, by favoring it rather young, with not too much alcohol, but especially a wine that you like. Shake this bottle to air its contents, pour it all into the vinegar and install it in a temperate room.  

After a fortnight, under these favorable conditions, a veil will appear on the surface of what is perhaps no longer wine and not yet vinegar. The latter will develop, grow to form a gelatinous mass called the mother and is a reserve of bacteria. These will gradually turn alcohol into acetic acid.  

Your vinegar is born.
