How to make chutney with green tomatoes

A gust of wind, branches broken under the weight of the fruit, heavy plants that need to be thinned and suddenly you find yourself with several kilos of green tomatoes. It´s time to think about jams and chutneys.

Chutney with green tomatoes is a sweet and sour condiment that will awaken the taste buds with its sweet and spicy flavours.
It goes very well with meat, poultry and fish dishes and it can also accompany cheeses such as goat´s cheese - a delight!

Ingredients

For 1 kg of green tomatoes
• 2 onions
• 90 g of currants
• 3 cloves
• 250 g of sugar
• 50 g of fresh ginger
• 1 red chilli pepper
• 1 teaspoon of salt
• 2 teaspoons of mustard seeds
• 300 ml of white wine vinegar

The recipe

• Cut the tomatoes and onions into cubes.
• Peel the ginger and cut it into small pieces.
• Chop the chilli pepper.
• Pour the sugar and vinegar into a large stainless steel or enamelled saucepan.
• Bring to the boil and stir until the sugar has completely dissolved.
• Add the tomatoes, spices and salt.
• Mix and leave to cook.
• When the mixture has reduced and begins to crystallise, switch off the heat.
• Fill your jars straight away up to 2 cm from the top and close.
Place them upside down.
