Olivier´s gaspacho recipe

Recipe for gaspacho by Olivier from Tom Press.

6 very ripe tomatoes
½ cucumber
½ pepper
½ clove of garlic
1 shallot
2 teaspoons of sugar
2 soup spoons of olive oil
Tabasco
Balsamic or sherry vinegar
A pinch of aniseed seeds
2 slices of bread

If, like me, you have a Hurom juicer this is perfect, because you will have all the flavour without being bothered by skin and pips that are unpleasant in the mouth. It is also very fast.

Put the vegetables* in the Hurom juicer.
Add the sugar, olive oil and bread in small pieces.
Mix well. Cover with cling film and leave in the fridge.
Before serving, add a drop of vinegar and a few aniseed seeds.

* if you want to press fruit after making the gaspacho, it is better to press the garlic separately.
Rinse thoroughly by leaving the Hurom juicer turning and it will be ready again.
