For 8 crepes:

1 sweet orange
40 g of sugar
30 cl of Grand Marnier
30 g of butter

Prepare your crepes as usual and keep them warm by placing them over a saucepan of boiling water, covered with a cloth to keep them soft.
In a big frying pan heated over a low flame, mix the butter and sugar, then add the orange juice and 20 cl of Grand Marnier. Mix until it boils so that the alcohol can evaporate without igniting.
Drop in crepes successively and fold them into four before placing on a hot plate.
Heat the remaining alcohol in a small saucepan and flambée over the plate.
