250 gr of chickpea flour
25cl of water
3 tablespoons of olive oil

Preparation of the oven
Preheat your oven to 275 ° C (thermostat 9)
Pour the cold water into a salad bowl, add in a fine rain the flour while mixing well with a whisk. Add olive oil and salt. Mix vigorously until you obtain a homogeneous paste.

Socca dish or the baking sheet, well oiled. Your pancake should not be too thick, around 3 mm. Bake and cook for 5 to 7 minutes. Gradually, it will brown and grill in some places. Watch it, it must not burn. If blisters form on the top pierce them with a knife.
