Socca is a popular dish which for a long time was a snack for fishermen, dockers and workers in Nice. When traveling to Nice, it is better to stroll through the old town where you can enjoy it hot and with your fingers. At home, this preparation is quite feasible, especially if you have a wood-fired oven , well that it can also be cooked in a traditional oven.   


La socca niçoise

Composed of chickpea flour, olive oil, water and salt, this large thin pancake, crispy to perfection on the top and soft underneath has no nothing complicated to do. Its success lies in its cooking and the quality of the olive oil, which must be very fruity. The best is the one cooked on the traditional large tinned copper dish.  

Ingredients for 4 people:

250 gr of chickpea flour
25cl of water
3 tablespoons of olive oil
1 teaspoon of salt
Pepper   


Preparation of the oven

Preheat your oven to 275 ° C (thermostat 9)
Pour the cold water into a salad bowl, add in a fine rain the flour while mixing well with a whisk. Add olive oil and salt. Mix vigorously until you obtain a homogeneous paste.
Divide your preparation on the Socca dish or the baking sheet, well oiled. Your pancake should not be too thick, around 3 mm. Bake and cook for 5 to 7 minutes. Gradually, it will brown and grill in some places. Watch it, it must not burn. If blisters form on the top pierce them with a knife.
To be enjoyed hot, plain or sprinkled with salt and pepper!
