Vacuum machine, how does it work?

Among the latest "modern" conservation techniques to be democratized, vacuuming food is no longer a luxury but a guarantee of quality, safety and economy. So to put an end to the preconceived ideas, here are some indications to explain the why of the how and to help you to choose.

What is "vacuuming"?  

We are not going to get into a biology class, but to put it simply, an organic material that stays in the open air and at room temperature has the unfortunate tendency to transform and decompose under the effect of certain bacteria.  

If we know for a very long time limit this decomposition by salt, smoke and cold, we also know that, when we preserve our food from the ambient air, we limit the development of these bacteria and in fact, we increase the shelf life.

In all cases, they are equipped with one or more pumps to evacuate the air, a sensor to detect the level of vacuum and a welding system to seal the bags.  

With the so-called "bell" machines, smooth bags are used because in the vacuuming process, the entire atmosphere in and around the bag is eliminated. These machines are reserved for heavy users and their cost does not fit into a family budget.  

With machines with external suction, only the air contained in the bag is sucked up. We work with containers, thicker, one side is embossed, it allows the air out of the bag when the pump is in operation.

You are a hunter or breeder and you want to enjoy your game and production throughout the year? Are you a professional and does the legislation require you to work in a laboratory?
