Making fruit strips (in a dryer)

How to make fruit strips
from cherries, strawberries, raspberries, gooseberries, blackcurrants:
it´s simple to make good fruit strips at home.

To dehydrate is to keep a product alive. Almost no water is retained, but all the nutrients are preserved. It is ideal for fruit: it is not cooked and the flavours are concentrated.
Preparation is easy. Making fruit strip is to dry a fruit puree. Strawberries, cherries, plums or raspberries, you can prepare any kind of fruit strip and even make blends...
Use ripe fruit.
Wash and remove stalks and bad fruit.
Drain and put through the blender with 10-20% sugar.
Place a silicone mat or baking paper in the bottom of your dehydrator trays without completely blocking the air passages. (There are also small flexible handy trays.)
Pour the fruit puree until a layer at least 6mm thick is formed. The layer should not be too thin.
Programme your dehydrator at under 45° C if you want to preserve all the nutritional potential of your fruit. After 8 hours of drying your strips are formed and you should be able to peel them off the sheet. If this is not the case, leave in the dehydrator for a few more hours. It all depends on the amount of water in your fruit ...
The strips are ""cooked"".
Some strips are firmer than others. Apple and pear strips tend to come apart but you can easily overcome this disadvantage by drying a sauce that you have previously cooked in the pan. For all fruit, you will also get more flavours by programming your dehydrator at 60° C. Allow six hours before finishing at 45° C.
Sugar and binders Everything depends on your fruit sugar content but for an average strip add 10 to 20% in relation to the weight of the fruit. You can replace sugar with agave syrup or mix with honey
Some mixed fruit purées render too much liquid. Give consistency and mellowness by adding bananas or oilseeds: almond, cashew or hazelnut purée ...
When are they ready?
The surface of your strip is soft and silky and you can remove it easily: it´s ready! Your strip should remain flexible, malleable and pleasant tasting. If you want to use shapes for making cones or other stiff presentations, shape your strip and leave it to harden in a dehydrator for 2 hours.
