The tomato - a star that is easy to store.

We see them in the city, on balconies, vegetable gardens are full of them and every amateur gardeners usually grows several varieties... the tomato is a genuine star whose success can be easily explained.

- on one side you have industrial tomatoes:
in France, for example, 60% of tomatoes consumed are imported and out of the six hundred thousand metric tons produced annually, 95% are greenhouse grown and a large portion of them are grown hydroponically. The varieties grown are not primarily chosen for the quality of their taste, and in any case, they are picked prior to maturity.

- on the other side, you have garden grown tomatoes:
they have been given time to grow. They have taste. And because we vary the varieties between harvests, we get to enjoy the special nature and taste of each one. As tomatoes are easy to grow and because we are always afraid that it might be a “bad year”, we are inclined to plant a few more than we need.

Genuinely “bad years” are quite rare. Every summer, when the vegetable plot is in full bloom and you cannot eat everything that is ripe, the same problem arises: how to preserve the tomatoes.

The simplest and by far the fastest method is to make tomato coulis. During the winter months, you can enjoy all the flavours and taste of real tomatoes.
Every time you open one of the jars to cook, you are adding a little of your own garden and the richness of summer to your meals. Authentic magic!
To do this, nothing could be easier: remove the stalks, cut your tomatoes in 4 and put them in the strainer. You will quickly obtain an even puree with no skin or pips.
Place the sauce in jars and sterilise it for 45 minutes after boiling begins. That’s it!
