The purpose of sulphiting is to prevent the alteration of the must by the combined action of oxygen and microbial or bacterial agents. This is a SO2 input that is made at the very beginning of the winemaking process. It is also an antioxidant and antiseptic that acts on the development of lactic bacteria (malolactic fermentation and other diseases) and acetic (which transform wine into vinegar).
Potassium bisulphite solution with a total SO2 content of 100 g per litre.
Applications:
Sulphiting of musts: 5.5 to 18 litres of solution per 100 hl (depending on the health of the vendenge)
Preservation of bland/rosé wines: 3.5 to 7.5 litres of solution per 100 hl.
Storage of red wines: 2.5 to 5.4 litres of solution per 100hl.
Storage of red wines: 2.5 to 5.4 litres of solution per 100 hl.
Preparation of the mutated musts: 25 to 55 litres of solution per 100 hl of must.  

The metabisulphite of potash can annihilate the yeasts and make the start of fermentation difficult, it is then possible to sow (yeast).  

Regulated product: maximum 100 milligrams per litre for red wines and 200 ml per litre for whites and rosés (see Official Journal of the European Union 24.7.2009 ANNEX I B.)
